Spooky S’more Brownies & Pumpkin Beer
As you know, we have been trying a different pumpkin beer each weekend of October! I saved this one for this weekend…mainly because it’s in a can and easily transportable and easy to open. Whether you’re taking a mini cooler along for the ride while trick-or-treating in a few days or enjoying one at a Halloween party this weekend…this is the perfect festive beer to try! Not only that but it’s another local brew from Denver Beer Co. This is the first beer we’ve tried from this brewery, and we really liked it!! It was more of an amber beer with a hint of pumpkin. Just perfect if you don’t want your beer drowning in pumpkin spice!
As for the recipe…I HAD to make a fun Halloween themed recipe! This is kid and adult friendly…just ask all the adults that devoured a pan at bible study a couple of nights ago 😂. They have a fun, delicious twist on your regular brownie with a yummy graham cracker crust and topped with a Halloween Ghost Peep Marshmallow…toasted to a delicious s’more perfection.
Not only is it fun and festive for Halloween, but it pairs excellently with our pumpkin beer of the week. I found this super fun picture on Pinterest last week… peeps are the perfect Halloween candy to enjoy with pumpkin beer!!!

A spooky twist on a delicious s’more! A graham cracker crust- gooey brownie and toasted peep marshmallow makes the perfect Halloween treat.
Ingredients
- For the graham cracker crust-
- 1 1/2 cups crushed graham crackers
- 1 stick of unsalted butter, melted
- 2 tablespoons sugar
- pinch of salt
- For the Brownies-
- 1 Box of Brownie mix
- About 1/4-1/2 cup chocolate chips
- 12 ghost peeps or 8 ghost peeps and 8 pumpkin peeps
- mini chocolate chips
Instructions
- Preheat oven to 350 degrees F. Butter the inside of an 8×8 inch pan
- Combine ingredients for graham cracker crust in a bowl, spread evenly into buttered pan. Bake for 10 minutes.
- While crust is baking, make brownie mix according to instructions on the box.
- When crust is finished, pour brownie mix over the top. Bake according to box instructions.
- When there is FIVE MINUTES LEFT, sprinkle a thin layer of chocolate chips over the top. (this is to help the peeps stick to the brownies)
- Place your peeps on top of the melty chocolate chips. The faces of the peeps melt away immediately, so place mini chocolate chips to replace the faces of the ghosts.
- Turn the oven to broil, return the pan to the oven and broil VERY BRIEFLY! Watch the pan & don’t walk away- you’ll ruin your peeps!
- Cut up your spooky s’mores and enjoy with a glass of Denver Beer Co. HEY PUMPKIN Beer! (and a glass of milk for your kiddos 😉)
