Light-Loaded Baked Potato Soup From Scratch
I almost always have yukon gold potatoes on hand, they are practically a staple in our meals each week, so it makes this soup so easy to make. I can almost guarantee all of the other ingredients are in your fridge or pantry already! So on a cold, snowy day like today you don’t have to head out to a grocery store to make a homemade soup, and if you do it’s probably for just one or two ingredients!
I also love love love this recipe because it’s not loaded with milk, butter, flour, etc. It’s nice and light, but still creamy like a baked potato soup.

A light, delicious alternative for your favorite Baked Potato Soup
Ingredients
- 1 Tbsp olive oil
- 4 slices turkey bacon
- 1/2 Cup chopped red onion
- 4-5 Yukon gold potatoes (substitute 2-3 Russet potatoes) peeled and diced
- 5 Cup reduced-sodium chicken broth
- 1/2 Cup reduced-fat sour cream
- 3/4 Cup shredded cheddar cheese
- 1/4 tsp pepper
- 1/4 tsp salt
- 1 tsp Italian seasoning
- 1/4 Cup chopped green onion
Instructions
- Heat oil in a large saucepan over medium heat
- Add bacon, cook until crisp, 4-5 min
- Transfer to a paper towel, leave any oil or drippings
- Add onion, stir to soften, 2-3 min
- Add potatoes, broth, salt and pepper, bring to a boil
- Reduce to simmer, cook until potatoes are tender, about 12-15 minutes
- Use a slotted spoon to transfer about 1/2 (for chunkier) – 3/4 (for less potato chunks in soup) into a bowl, use a potato masher to mash until almost smooth, but still a little chunky.
- Return potatoes to pan, add sour cream, 1/2 cup cheese, Italian seasoning, stir until cheese melts and soup is heated, about 2-5 minutes
- Serve with chopped bacon bits, green onions and cheese
