Finally Friday and I am SO EXCITED to share this pairing this week!! As most of you know, I spent the day at Wine on the Rocks a couple of weeks ago and got to try some really delicious local wines. On hot summer days, I really love a glass of Chardonnay, it’s my go-to summer wine. But one Colorado Winery’s Chardonnay REALLY stood out to me and really takes the cake for my favorite summer Chardonnay this year. So of course I had to do a pairing with it to share all it’s greatness with you all! This week’s Pairing of the Week is….
Carboy Chardonnay and Cajun Shrimp Pasta
As I said before, this Carboy Chardonnay has been my absolute favorite this summer! And that’s saying a lot considering Chardonnay is my go-to “Saturday summer afternoon on the patio” wine, so I have tried several! What makes this wine even better is that it is made at a local winery right here in Colorado called Carboy Winery. If you read “Wine Tasting From Scratch” a few weeks back, you know I love wine tasting and supporting local wineries! So I am excited to share another one. Carboy Winery has two locations one in Littleton and one in Breckenridge, Colorado. Littleton is pretty close by to where I am, and after trying this wine I am already planning a date night to take the hubby for a tour and a tasting! It will make a fun date night. I’m really looking forward to it because one thing I love that’s different that other wineries I have been to is they serve food…as you can tell I LOVE food! So I’m sold, sign me up! I had a few ideas in mind for different recipes to try with this wine, I knew I wanted a pasta and I knew I wanted shrimp. I decided to be a bit bold and go for a spicier Cajun pasta! The spicy Cajun seasoning was absolutely perfect for this Carboy Chardonnay. The Carboy Chardonnay has a lemon zest taste, perfect for the shrimp, and it compliments the spice AMAZINGLY or as my husband, Jordan said…
“It amplifies the spice perfectly.”

I made this pasta with zucchini noodles since I’ve been sticking to low carb lately to lose some baby weight! But these can absolutely be substituted for your noodle of choice, I think I would go with angel hair or linguine. It was incredibly quick and easy and a perfect pairing to go with my favorite Carboy Chardonnay!

light, spicy & healthy cajun shrimp pasta
Ingredients
- 1 Lb Shrimp (tail-off)
- 1-1 1/2 Cups Heavy Cream
- 2-3 Tbsp Cajun Seasoning
- 1/2 Cup Chopped Onion
- 3 Garlic Cloves
- 2 Tbsp Olive Oil
- 1 Cup Parmesan Cheese
- For the noodles- 2 medium zucchini OR 1/2 Lb Linguine noodles
Instructions
- If you are using regular noodles- – Bring a large pot of water to a boil.
- Add noodles, cook for about 10-15 minutes or until noodles are done
- While noodles are boiling – Heat Olive Oil over medium heat in a large pot, add shrimp and garlic.
- Cook and stir for about 5 minutes, then add 1 Tbsp Cajun seasoning and onion
- When shrimp is done, add 1Tbsp of seasoning and 1 Cup heavy cream
- Bring to a boil, reduce to simmer for about 5 minutes
- If you are using zucchini noodles- (I use this Pampered Chef Veggie Strip Makeror you can find something similar on Amazon-I have also just used a cheese grater in the past) – Grate the zucchini with the veggie strip maker to make long zucchini noodles
- Add noodles and parmesan cheese to shrimp, stir continuously until cheese is melted and noodles are coated and warm.
- If sauce is too thick, add more cream
- After plating pasta, top with additional Cajun seasoning as desired
- Pour a glass of Carboy Chardonnay and enjoy!
