Can you believe it’s October 1st on MONDAY!? This year is flying by. October is such a great month and I am so excited that it’s here. Jordan’s birthday is in October, then Halloween, then before you know it we’re counting down the days to Thanksgiving and Christmas. Not only is there a lot to celebrate, but the weather is definitely starting to cool down, and I love nothing more than a warm bowl of soup or chili on a cold day! Chicken Green Chili Stew and Sam Adams Oktoberfest
Green Chili & Beer – is there anything else that just screams fall more than that? This is yet again one of my mama’s amazing recipes that she always makes in the fall & winter. It has a nice amount of spice and is so perfect to warm you up on a chili day. I love serving it with quesadillas or a warm tortilla, they are great for dipping! Today its 59 degrees in Denver, so I’m excited to cuddle up with a bowl of this later tonight.
As for the drink pairing, today I chose my all time favorite fall beer. Beer is a classic drink to pair with green chili- especially a malt beer or IPA. The Sam Adams Oktoberfest is a beautifully colored amber malt beer… If you have never had it- go out and buy some- it’s SO GOOD! I have tried a few different Oktoberfest beer’s and this one is just always my favorite that I go back to. I especially love it poured into a frozen mug 😋

Ingredients
- 4 chicken breasts, cut into cubes
- 1 Cup chopped onion
- 1 medium red or green bell pepper
- 3 cloves of garlic
- 2 Tbsp oil
- 2 14-oz cans diced tomato
- 1 15-oz can pinto beans, drained
- 1 Cup Pace Picante Salsa
- 1 can corn, drained
- 2 tsp chili powder
- 1 tsp ground cumin
- About 4 fresh roasted green chilis (more or less to your liking)
Instructions
- In a large pot, cook chopped chicken, onion, green pepper and garlic in oil.
- Add tomatoes (with juices), beans, corn, picante sauce, green chilis and spices.
- Stir, cover and cook on medium/low for at least one hour.
- Top with shredded cheese, sour cream & green onion
- Serve with quesadillas or warm tortillas and a nice cold Sam Adams Oktoberfest!
