Light-Loaded Baked Potato Soup From Scratch

I almost always have yukon gold potatoes on hand, they are practically a staple in our meals each week, so it makes this soup so easy to make. I can almost guarantee all of the other ingredients are in your fridge or pantry already! So on a cold, snowy day like today you don’t have to head out to a grocery store to make a homemade soup, and if you do it’s probably for just one or two ingredients!

I also love love love this recipe because it’s not loaded with milk, butter, flour, etc. It’s nice and light, but still creamy like a baked potato soup.
