Anyways Jordan likes to celebrate a little bit on this day, mostly because like I said it’s an excuse to drink beer, but it’s also a day that we get to make new recipes! This week for St. Patricks day we’re making a classic…
Reuben Sandwich and Guinness
Is any St. Patricks’s day really complete without a glass of Guinness? I personally can’t drink such a dark beer, so Jordan so kindly found a Guinness BLONDE for me to have! So I can still celebrate my minimal Irish roots 😂 I did however have a sip of Jordan’s while we were eating and the taste of the beer was MUCH better and much more tolerable paired with the sandwich, so I recommend either!
As for the Irish pairing…this reuben sandwich is AMAZING! The corned beef is really what makes it “Irish” and gives it a really great flavor. I love this recipe because it really won’t break the bank and is so incredibly easy to follow- even my little brothers could make it (yes Cody and Derek I’m calling you out to cook something! haha)

Ingredients
- 8 slices Marbled Rye Bread
- Thousand Island Dressing
- 1 14 oz can Saurkraut
- 1 lb Corned Beef
- 8 slices Swiss Cheese
- Butter
Instructions
- Heat Saurkraut in a small saucepan or in the microwave then drain
- Evenly spread a good amount of Thousand Island dressing on the inside of pieces of bread
- Layer about 4-6 slices of corned beef on one slice, then 2 slices of swiss cheese on the other slice.4, Using tongs- spread saurkraut over the corned beef then cover with swiss cheese slice.
- Spread butter on the outside of the sandwich, place butter-side down on a skillet on medium heat, spread butter on the top side.
- Cook for about 2 minutes, then with a spatula gently peak under the sandwich- if it’s golden brown, press down on the top of the sandwich to sort of seal everything together then flip.
- Cook this side for about 2 minutes or until golden brown.
- Side options- steak fries or sweet potato fries, sautéed balsamic brussel sprouts
- Serve with a glass of Guinness! Happy St. Patty’s!
