Happy Wine Wednesday! Can you believe pools open in just 3 short days!? It truly doesn’t feel like it here in Colorado… it snowed about 5 inches yesterday! SO over it and SO ready for summertime. Before this ridiculous storm, Jordan and I got a little taste of summer last week on our back deck, I was really craving s’mores, but didn’t have marshmallow’s and wanted to be a bit healthier with this s’more recipe….and it’s just in time for the Memorial Day festivities this weekend! This week’s pairing of the week is
Talon Riesling & Strawberry S’mores
Now hear me out on this one… I know it’s a little different and a bit of a crazy idea but surprisingly it WORKED and was SO GOOD! It’s literally just like a chocolate covered strawberry but a bit funner to make. So today’s pairing is much less of a recipe and more of a fun summer “how to.”
So here’s how this idea came to be… Jordan surprised me with a new fire pit for Mother’s Day (I LOVE backyard campfires). The day it came in I obviously wanted to put it to some use. Unfortunately I didn’t have marshmallow’s lying around and had a new fancy wine that I really wanted to do a pairing with. Thus came the idea of the strawberry s’more π.
Now I know you’re wondering… do you roast the strawberry like a marshmallow? No, it’s actually a bit backwards. You’re going to use the fire to melt the chocolate. Jordan and I tried two different strategies here, so you can try both and see which you prefer! First we tried using the s’more stick to hold the graham cracker and the chocolate. You have to be SUPER careful with this one, one wrong bump and your cracker and chocolate go tumbling into the fire as Jordan’s did π
After some lost chocolate we decided to let it sit just sort of on the rim of the fire pit and until the chocolate melted. This method obviously took a little bit longer, but less chocolate was lost… so really either works! When the chocolate is melted, simply take a strawberry half and press it into the melted chocolate and viola! A Strawberry S’more. You get to enjoy the fun of making a s’more without the extra calories of a second graham cracker and sugar in a marshmallow.
Now for the wine
Like I said before, I had a really fancy wine I was dying to try and make a pairing with! My mom and dad recently went on a trip to Palisade, CO (wine country) and brought me their favorite from the trip for Mother’s Day (I had a pretty good Mother’s Day if you couldn’t tellπ). They know I’m not a huge sweet wine fan (neither are they) and typically riesling is pretty sweet and NOT up my alley… but this wine was SO GOOD! It’s made at a Palisade Winery called Talon Winery. Unfortunately their wine’s are not sold locally but can be ordered on their website here and order the Riesling for only $16! It was a very easy wine to drink and perfect to pair with this tasty dessert. It’s wonderful for summer nights by the campfire or a little day drinking on the patio! I’m excited to get another bottle this summer when Jordan and I head up to Palisade!
